Restaurant Inter Scaldes in the Zeeland village of Kruiningen has become the third Dutch restaurant to be awarded a prestigious third Michelin star. The Michelin guide group announced the new star ratings for the Netherlands in Amsterdam on Monday. ‘We’ve worked for this for a long, long time,’ said Claudia Brevet of the husband and wife team who run the restaurant. ‘It’s been about blood, sweat and tears… but the result is worth it.’ Inter Scaldes won its first Michelin star in 1978 and has had a second since 1984. Jannis Brevet took over the kitchen in 2001. Michelin international director Michael Ellis praised the Brevet for the ‘way he uses first-class regional products’ and his ‘stunning alliances of taste’.

History of the restaurant
Enjoyment between the estuaries
The Manoir Restaurant Inter Scaldes is named after its magnificent surroundings. Situated in the wide open reclaimed land of the Province of Zeeland, on the narrowest part of Zuid-Beveland between the Oosterschelde and Westerschelde [known as the Scheldt estuaries]. A wealth of traditional trees and plants embellish the beautifully laid out English-style gardens and create a shaded ambiance.
The house dates back to 1927 and has been used as a restaurant since 1968. Over the years, an elegant Serre restaurant [conservatory restaurant] was built. In 1990, the romantic Manoir was equipped with 12 luxury rooms, each with a personal touch, furnished with colourful, refined fabrics and stylish antiques. However, disaster struck in 2003 when the restaurant burnt down. The renewed and fabulously restyled restaurant reopened in all its glory in May 2004. Every year, our membership of the famous international Relais & Chateaux, Traditions & Qualité and Les Patrons Cuisiniers chains attracts gourmets from around the world.
Patron-Cuisinier Jannis Brevet, who was born in Zeeland and is known for his menu which incorporates the influences of Zeeland’s waters. Oosterschelde (seasonal) lobster, oysters, mussels and bass are balanced by all the good things the countryside has to offer such as Zeeland suckling lamb, the famous vegetables Sea fennel and Sea aster and, naturally, cheese and fruits from the reclaimed land in Beveland. Jannis Brevet gained renown at famous restaurants in the Netherlands and abroad. His idiosyncratic style of cooking, his vision and the exceptional combinations of spices, specialities and recipes have been recorded in the beautiful cookbook Inter Scaldes & Jannis Brevet.
